Sister Act's White Maltese Jello was the big hit of the picnic. 
It was the perfect cool summer salad.

White Maltese Jello

Ingredients:
2 envelopes Knox gelatin
2/3 cup water
2 (8 oz.) pkg. cream cheese
1 cup sugar
2 cups milk (we heated the milk slightly for about 2 minutes in the microwave)
2 tsp. vanilla
2 Tbsp. lemon juice
8 oz. Cool Whip
Fresh strawberries or Raspberries (We used 2 small packages)

Directions:
Heat water in a small pan and dissolve the gelatin. Set aside to cool. 
Let cream cheese soften to room temperature and beat well with mixer. 
Add sugar and beat well (Sherry likes to really make this part fluffy). 
Add milk, vanilla, and lemon juice. 
Put the thawed cool whip in a separate bowl. 
Add the gelatin mixture to it and fold them together. 
Pour the mixture in a shallow bowl.
Cover and refrigerate. Will set in 2 hours.
Top with fresh raspberries or strawberries (or black rasberries for black Maltese eyes) just before serving.
